{"id":540,"date":"2013-02-10T05:02:30","date_gmt":"2013-02-10T05:02:30","guid":{"rendered":"http:\/\/parrybaysheepfarm.com\/wordpress\/?p=540"},"modified":"2013-02-10T05:02:30","modified_gmt":"2013-02-10T05:02:30","slug":"honey-lemon-rack-of-lamb-2","status":"publish","type":"post","link":"https:\/\/parrybaysheepfarm.com\/wordpress\/2013\/honey-lemon-rack-of-lamb-2\/","title":{"rendered":"Honey Lemon Rack of Lamb."},"content":{"rendered":"<p>Honey-Lemon Rack of Lamb<br \/>\n\u2022\t2 racks of lamb, 7 to 8 ribs on each<br \/>\n\u2022\t2 large cloves garlic, peeled and cut in thin slivers<br \/>\n\u2022\tsalt<br \/>\n\u2022\t1\/2 cup honey<br \/>\n\u2022\t1\/3 cup firmly packed brown sugar<br \/>\n\u2022\t6 tablespoons lemon juice<br \/>\n\u2022\t1\/2 teaspoon garlic powder<br \/>\n\u2022\t1 teaspoon lemon zest<br \/>\n\u2022\t1 tablespoon fresh chopped mint leaves or about 1 teaspoon dried mint leaves<br \/>\n\u2022\t1\/2 cup finely chopped pecans<br \/>\nHeat oven to 325\u00b0.  Cut small slits all over the lamb and insert garlic slivers. Place the racks, bone side down, in a shallow roasting pan. Roast for 30 minutes.<br \/>\nMeanwhile, combine honey, brown sugar, lemon juice, and garlic powder in a small saucepan. Heat, stirring, over medium-low heat, until sugar is dissolved; remove from heat. Stir in lemon peel, mint, and pecans.<br \/>\nSpoon the honey mixture over the lamb.
