{"id":503,"date":"2012-06-17T22:39:16","date_gmt":"2012-06-17T22:39:16","guid":{"rendered":"http:\/\/parrybaysheepfarm.com\/wordpress\/?p=503"},"modified":"2012-06-17T22:39:16","modified_gmt":"2012-06-17T22:39:16","slug":"honey-lemon-rack-of-lamb","status":"publish","type":"post","link":"https:\/\/parrybaysheepfarm.com\/wordpress\/2012\/honey-lemon-rack-of-lamb\/","title":{"rendered":"Honey-Lemon Rack of Lamb"},"content":{"rendered":"<ul>\n<li>2 racks of lamb, 7 to 8 ribs on each<\/li>\n<li>2 large cloves garlic, peeled and cut in thin slivers<\/li>\n<li>salt<\/li>\n<li>1\/2 cup honey<\/li>\n<li>1\/3 cup firmly packed brown sugar<\/li>\n<li>6 tablespoons lemon juice<\/li>\n<li>1\/2 teaspoon garlic powder<\/li>\n<li>1 teaspoon lemon zest<\/li>\n<li>1 tablespoon fresh chopped mint leaves or about 1 teaspoon dried mint leaves<\/li>\n<li>1\/2 cup finely chopped pecans<\/li>\n<\/ul>\n<p>Heat oven to 325\u00b0.\u00a0 Cut small slits all over the lamb and insert garlic slivers. Place the racks, bone side down, in a shallow roasting pan. Roast for 30 minutes.<\/p>\n<p>Meanwhile, combine honey, brown sugar, lemon juice, and garlic powder in a small saucepan. Heat, stirring, over medium-low heat, until sugar is dissolved; remove from heat. Stir in lemon peel, mint, and pecans.<\/p>\n<p>Spoon the honey mixture over the lamb.
