{"id":316,"date":"2011-11-30T20:11:07","date_gmt":"2011-11-30T20:11:07","guid":{"rendered":"http:\/\/parrybaysheepfarm.com\/wordpress\/?p=316"},"modified":"2011-11-30T20:11:07","modified_gmt":"2011-11-30T20:11:07","slug":"quabili-pilau","status":"publish","type":"post","link":"https:\/\/parrybaysheepfarm.com\/wordpress\/2011\/quabili-pilau\/","title":{"rendered":"Quabili Pilau"},"content":{"rendered":"<p>This is a recipe that was given to us by friends who worked for some years as university professors\u00a0in Afghanistan.\u00a0 It works equally well with ground mutton or lamb.<\/p>\n<p>1 lb. ground lamb.<\/p>\n<p>1 tablespoon oil.<\/p>\n<p>approximately 1 cup diced onion.<\/p>\n<p>1 \u00bd cups rice<\/p>\n<p>lamb stock, plus enough water to make 3 cups.<\/p>\n<p>\u00bd teaspoon saffron (optional)<\/p>\n<p>1 teaspoon each of ground cinnamon, cumin,and coriander.<\/p>\n<p>\u00bd teaspoon ground cardamom.<\/p>\n<p>salt and pepper to taste.<\/p>\n<p>3 medium sized carrots.<\/p>\n<p>1 tablespoon sugar<\/p>\n<p>1 cup golden raisins.<\/p>\n<p>\u00bd cup toasted almonds. (whole or slivered)<\/p>\n<p>Preheat oven to 325 degrees.<\/p>\n<p>Saute the onion in some oil and cook until it is translucent.\u00a0 Add salt and pepper to taste.\u00a0 Add the lamb or mutton and cook until it is no longer pink.\u00a0 Add 3 cups of water to the meat mixture and bring to a boil.\u00a0 Drain the meat and set it aside, keeping all the liquid it was cooked in.<\/p>\n<p>Measure that liquid and add enough water to make 3 cups and pour this into a cooking pot with a tight fitting lid.\u00a0 Add the rice, saffron, cinnamon, coriander, cumin and cardamom.\u00a0 Cover, bring to a boil and simmer 20 minutes or until the rice is tender.<\/p>\n<p>In the meantime, cut the carrots up into matchstick-sized pieces and saute them with the sugar and a little bit of oil, for about 5 minutes.\u00a0 Watch carefully so they don\u2019t burn.\u00a0 Add the raisins and continue to saute the mixture for a few more minutes until the raisins are plump and the carrots tender but not mushy.\u00a0 Stir the toasted almonds into the mixture and set aside.<\/p>\n<p>Grease a casserole dish and put a third of the rice mixture on the bottom, followed by half the meat mixture, then half the carrot mixture.
